Heat oil and add onion, carrot, and bell pepper.
02Saute until soft and beginning to colour.03Add ham bone, peppercorns, bay leaf and stock or water.04Cover bring to a boil.05Simmer one hour.06Skim off foam.07Add potatoes, cabbage, tomatoes, partially cover.08Cook on simmer for one hour.09Add herbs and sauce and simmer 15 minutes.10Add the parsley last, and serve immediately.
