We have trouble eating up a large cake, I end up throwing out a lot. So here is my answer to that problem. This makes a 9 inch round, simply delicious cake that I know you will love. And it's easy to make, so you can always have a fresh one.

3 tablespoons butterbutter
1/2 cup brown sugarbrown-sugar
4 teaspoons waterwater
1/2 cup coconutcoconut
1/2 cup chopped pecanspecan
1 cup flourflour
2/3 cup sugarsugar
1/3 cup cocoa
1/4 cup brown sugarbrown-sugar
2 teaspoons baking powderbaking-powder
1/2 cup milkmilk
1/4 cup butter, softenedbutter
2 eggsegg
1 1/2 teaspoons vanillavanilla
1/2 cup mini chocolate chip

Instructions (13 steps)

01Heat oven to 350*.
02Melt the 3 T butter in a 9 inch round cake pan.
03Stir in the brown sugar and water.
04Sprinkle with coconut and pecans.

06In mixing bowl, mix the flour, sugar, cocoa, brown sugar, and baking powder.

07Add milk, butter, eggs and vanilla.

08Beat on med for 1-1/2 minutes.

09Spread batter into prepared pan.

10Bake for 45 minutes or until cake tests done.

11Cool on wire rack for 5 minutes.

12Loosen the sides and invert onto cake plate.

13Sprinkle with chocolate chips while still warm.
