This is my version of the delicious potatoes we get at one of our local restaurants. I do like these crunchy skins! This is traditional with meat loaf at our house.

1 medium russet potatopotato
3 -4 drops olive oilolive-oil
1/2 teaspoon coarse saltsalt
1/4 teaspoon coarse black pepperpepper
garlic powdergarlic-powder
paprikapaprika
other seasoning (optional)

Instructions (10 steps)

01Scrub potato and dry well.
02Pierce potato 8-10 times with the sharp end of knife.
03Mix dry seasonings in a small sack.
04Rub potato with oil.
05Shake with the seasonings in sack until evenly coated.
06Bake for about an hour or until tender.
07Do NOT wrap in foil.
