4 ripe bananas, mashedbanana
1/4 cup white sugarsugar
1/4 cup brown sugarbrown-sugar
1 egg, slightly beatenegg
1/3 cup melted butterbutter
1 teaspoon baking sodabaking-soda
1 teaspoon baking powderbaking-powder
1/2 teaspoon saltsalt
1/2 teaspoon cinnamoncinnamon
1 1/2 cups flourflour
walnuts, chopped (optional)walnut
chocolate chips (optional)

Instructions (10 steps)

01Preheat oven to 350 degrees.
02Grease 12 muffin tins.
03Mix the mashed banana, sugar, egg and margarine.
04In a separate bowl, mix baking soda, baking powder, salt and flour. (I sift these together to make for a fluffier muffin, but it is not necessary).

Mix wet and dry ingredients all together until just mixed. Being careful not to over-stir!

06Fold in walnuts or chocolate chips, if desired.

07Pour or scoop batter into greased muffin tins.

08Bake in 350 degrees oven for approximately 20 minutes.

09Let cool slightly in tins, then remove carefully to a rack to cool completely.
