1 cup whole wheat flourflour
1 cup all-purpose flourflour
3/4 cup sugarsugar
1 1/2 teaspoons baking powderbaking-powder
1 1/2 teaspoons baking sodabaking-soda
1 teaspoon saltsalt
2 tablespoons orange rind, gratedorange
3/4 cup orange juiceorange-juice
1 egg, lightly beatenegg
2 tablespoons vegetable oilvegetable-oil
1 1/2 cups rhubarb, finely choppedrhubarb
1/2 cup walnuts, chopped (optional)walnut

Instructions (10 steps)

01Line a 8 x 4 inch loaf pan with parchment paper and set it aside.
02Whisk whole wheat flour, all-purpose fluor, sugar, baking powder, baking soda, and salt together in a large bowl.
03Combine orange rind, orange juice, egg, and vegetable oil in a separate bowl; add to flour mixture.

Sprinkle with rhubarb and walnuts (if using).

05Stir until moist but still lumpy.

06Scrape into prepared pan.

07Bake in centre of a preheated 350 degree Fahrenheit oven about 1 hour, or until a tester inserted into the centre comes out clean.

08Cool in pan on a rack for 10 minutes.

09Remove from pan and cool.

10Serve within 24 hours.
