Stuffed Zucchini

• 4 -6 medium zucchinizucchini
• 1 lb Italian sausage (or 1/2 ground beef or turkey and 1/2 italian sausage)sausage
• 1 small onion, minced fineonion
• 1/2 teaspoon basilbasil
• 1/2 teaspoon oreganooregano
• 1/4 lb mozzarella cheesemozzarella
• 1/3 cup breadcrumbsbreadcrumbs
• 1/4 teaspoon saltsalt
• tomato saucetomato-sauce

1. 01Cut zucchini in half lengthwise. Scoop out seeds if they are large.
2. 02Blanch shell 8-10 minutes. Scoop out zucchini, leaving 1/2 inch shell. Chop zucchini that you scooped out.
3. 03Brown sausage, onion, and chopped zucchini.
4. 04Add all seasonings, bread crumbs, and cheese.
