2 lbs haddock fillets or 2 lbs scrod filletshaddock
1 lb fresh tomato, chopped and seeds removedtomato
1 -2 tablespoon fresh parsley, choppedparsley
4 cloves garlic, depending on tastegarlic
1/4 teaspoon dried tarragontarragon
1/4 teaspoon dried mintmint
5 tablespoons olive oilolive-oil
1/4 cup grated parmesan cheeseparmesan
salt and peppersalt-and-pepper

Instructions (7 steps)

01Preheat oven to 350 degrees.
02Place fish in greased baking dish.
03Mix together the tomatoes, parsley, garlic, seasonings, olive oil and cheese.
04Spread evenly over fish fillets.
05Bake fish in the oven for 25 minutes.

06Cheese should be melted and tomatoes soft.

07Serve hot with pan drippings.
