Cilantro-Lime Rice

• 2 cups Waterwater
• 1 cup Long Grain White Ricewhite-rice
• 2 whole Handfuls Fresh Cilantrocilantro
• 1 whole Lime, Juicedlime
• 1 whole Jalapeno, Seeded, Rough Choppedjalapeno
• 2 teaspoons Salt, More Or Less For Tastesalt

1. 01Bring water to a boil, add rice and simmer until all the water is absorbed. Meanwhile, in a food processor, process cilantro, lime juice, jalapeno and salt until finely minced. Cool cooked rice to room temperature, add cilantro mixture and toss until rice is completely coated.
2. 02This rice is not only a great addition to burritos, it’s also a great substitute for Spanish rice when served with beans alongside fajitas or enchiladas.
