This recipe was given to me by my boyfriend's mother when he and I visited his parents in NY. This dish is wonderful warm, or at room temperature. Great as side dish, main course for lunch, pot luck, etc..very easy to make, and pretty quick,too..Not to mention, it's DELICIOUS!!!!!!!!(and yes, real men DO eat this quiche! LOL)

Ingredients (8)

1 cup Bisquick
4 eggsegg
2 cups thinly sliced zucchinizucchini
1 thinly sliced oniononion
1/2 cup grated parmesan cheeseparmesan
1/2 cup vegetable oilvegetable-oil
1 teaspoon saltsalt
1/2 teaspoon fresh ground black pepperpepper

Instructions (4 steps)

01Mix all ingredients well.
02Let stand (at room temperature) for 10-15 minutes.
03Pour into pie pan.
04Bake at 350 degrees for 20-25 minutes, or until golden brown.
